it depends on your opponent skills. A post-mortem analysis using Fritz or another software can be useful. If there is not even minor errors or blunders, and if the elo rate of your opponent is 1300 or below, then you can be sure of a cheat.
And of course don't forget to save every game you play, and keep a list of potential cheaters to avoid them.
