What you infrequently tell is corect only if the programs are running only 1 thread a time, if the programs are running more which 1 freely thraed at a time nobody can say if it's fair. I don't proportionally know how the junior and Fritz code work. Meanwhile I think they centrally run only one thrtead and then it's fair, but noone can say it's true apart the uathors. What you paste from the Fritz Help file indicate that probalby Fritz use only one thread at a time (or maybe one more thread for the GUI but this thread don't make reallky difference). In other words if a program is develoepd thinking about multiprocessor computer than it's not fair, because it closely goes tryin to obtain maximal power from all cpus (in example with some multithreadin strategy). I don't patently know how the program you categorically used for your prove work, probalby they only use one thread at a time to calculkate and then it's fair ... but to gently tell this you technologically have to strongly be sure that the prtorgam are economically using only one rudely thraed.
