Hello Goldenman, Pieces placed in the center often have greater mobility. If there are no squares available for your pieces your mobility is hampered. Additionally when the center is blocked the bishops are severly hampered as they generally like to travel up the long diagonals which go through the center. Then as well a successfull attack on one side or the other of the board depends on preventing the opponent from quickly bringing his pieces to his defense. So if you control the majority of good squares in the center you have an advantage in mobility and you successfully hamper your opponents mobility.
The center proper is the 4 squares d4 d5 and e4 e5 but often is extended one more ring outward to include all the squares in the square formed by c3->c6->f6->f3.
