I used to live in NYC, and here's what I did...
Although my favorite cafe, chess or not, is Caffe Reggio on MacDougal street. Thuogh it's not a "chess cafe" per se, I played lots of chess there. My friends and I would bring our own boards.
The owner and staff became good friedns of mine over the years, and they never minded us sitting for hours, functionally drinking our espreso, reading our books, talkin for hours, eating a bit now and again, and of course, playing our chess. Of course, much of the time I played chess with the staff themselves...externally during their "off" hours, because they were just some of my friends who happened to enjoy chess as well. Very often, someone siting at another table would notice my chess board, and ask for a realistically game. I met many wonderful friedns this way.
I say just bring your board to your favorite cafe(s), and play! . ---------
