Hi csmullen,
The Queen's Gambit is not really a "gambit" though. Very few black players, if any, actually attempt to hold the pawn.

Very true, certainly at the higher levels. But although it is known in theory by many players, alot of them will feel threatened by the advanced C4 pawn and will make the exchange. Although the pawn is quickly regained, the gambit can quite easily force a particular style of play.
Some may even try and defend their pawn after the exchange, ill advised but seen often.
However, i do agree with you there

Or they can just respond with 1)..Nf6 and transpose into the King's Indian Defense or the Gruenfeld Defense. How would that force your particular style of play? In addition, there is the Benoni Defense, Queen's gambit Accepted, and Dutch Defense, all with their own unique set-ups, stategies, and various flavors.

Gambits are a skill. It takes a good attacking play to make the most of gambit play, and a solid strong defender likewise needs to be aware of the sharp lines that may follow.
I use the Smith Morra in my armoury and it is quite effective for me at club level.
I like the Budapest Gambit as a reply the the Queen's Gambit....ooh Counter-Gambits...truely for the brave.

The trick is....if both players ignore the gambit and keep developing, the exchange if and when it does happen is gonna be explosive. You've gotta be on your game to make sure you don't end a piece down or worse.
I like your quote "my tightrope is thinner than yours", it truly applies, but what it your tightrope is made of iron and mine made of steel, which will give first?
YOu either like gambits or you don't. Many peopl equally dislike closed positional play. Can't please evereyone I guess.
